bean dip

Makes about 2 cups

Recipe Ingredients:

  • 1 whole head of garlic

  • 1 tsp. olive oil

  • 1 3/4 cups cooked Great Northern white beans

  • 1/4 tsp. salt

  • 1/4 tsp. black pepper

  • 3 tbsp. olive oil

  • 1 tbsp. fresh lemon juice

  • 2-3 tbsp. warm water

Instructions

Preheat the oven to 375 degrees.

Slice the top off the head of the garlic and place in a small baking dish. Pour the olive oil on top and let it soak in while the oven preheats.

Roast the garlic for 45 minutes. Remove from the oven, but keep the oven on.

Squeeze the cloves from the garlic bulb or remove with a knife. Put the garlic in the bowl of a food processor.

Add all the remaining ingredients to the processor.

Pulse until smooth.

Note: Use extra warm water to thin it out, if desired.
