I was watching the Food Network and saw Trisha Yearwood make a wonderful marinated vegetable salad. It looked so fresh and refreshing that I had to try it.  I wanted to add more protein to it so I included some dried baby limas that I had cooked. I changed the amount of the ingredients up a little. If you have ever bought the bottled bean salad at Costco, this marinade has the exact same taste. This made a pretty big bowl.  It will probably serve 8 to 10 people.

Ingredients

1 cup granulated sugar
1 cup red wine vinegar
1/2 cup olive oil
1 teaspoon salt
1 1/2 cups cooked baby lima beans
12 ounces fresh green beans or frozen green beans, defrosted & drained
12 ounces frozen green peas, defrosted & drained
2 stalks celery chopped
1-4 ounce jar chopped pimentos
1 medium sweet onion, thinly sliced
1 red bell pepper, cored, seeded and chopped

Bring the sugar and vinegar to a boil in a medium saucepan. Add the oil and salt and set aside to cool.

Add to a bowl the green beans, peas, celery, pimentos, onions and bell peppers.

Pour the vinegar mixture over the vegetables, cover with plastic wrap and marinade in the refrigerator for 24 hours.
