bean brownies

Makes 16 brownies

Recipe Ingredients:

  • 1 cup cooked black beans, dried off

  • 1/2 cup unsweetened butter

  • 1/3 cup all purpose flour

  • pinch of salt

  • 2 large eggs

  • 3/4 cup granulated sugar

  • 1 tsp. pure vanilla extract

  • 1 1/2 cups shredded cabbage

  • 2/3 cup chocolate chips

Instructions

Preheat oven to 350 degrees.

In a small saucepan over low heat, melt the butter and unsweetened chocolate, making sure you don’t burn them. Mix until the chocolate and butter are combined. Remove from heat.

In a medium bowl combine the flour and salt together.

In the bowl of a food processor add the black beans and the cooled butter/chocolate mixture. Process until smooth. Add the eggs, sugar and vanilla. Process again until combined. Add the mixture to the flour and fold in gently leaving flour still visible. Add the chocolate chips and fold to combine.

Pour the batter into a lightly greased 8 inch square pan. Bake for 28-30 minutes. Cool completely before eating. These need to set a while before eating.
